Cheesy Cauliflower Bake

This cheesy oven backed cauliflower recipe is a classic!

Ingredients

  • 1 cauliflower (leaves cut off), broken into pieces

  • 250 g potatoes, peeled & cut into 4 pieces

  • 500ml milk

  • 4 tbsp flour

  • 50g butter

  • 100g cheddar, grated (blue cheese is also delicious!)

  • Salt to taste

  • 2-3 tbsp breadcrumbs (optional)

Method

  1. Bring a large saucepan of water to the boil, then add the potatoes and cook for about 10 minutes.

  2. Then, add the cauliflower, broken into pieces with the potatoes and cook for another 5 minutes.

  3. Drain the potatoes and cauliflower, then tip into an ovenproof dish. Heat oven to 200C to 220C.

  4. Put the saucepan back on the heat and add the milk, the flour and the butter.

  5. Keep whisking fast as the butter melts and the mixture comes to the boil – the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick. Season to taste.

  6. Turn off the heat, stir in most of the grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.

  7. Put in the oven and bake for about 20 mins until slightly brown and bubbling.
